Coat chicken tenders with seasoned flour.

Combine flour, cornstarch, sweet heat rub, and baking powder in a bowl.

Transfer one-third of the flour mixture into another bowl.

Add cold club soda to the smaller amount of flour mixture and whisk until a loose pancake batter consistency is achieved.

Slice garlic thinly.

Melt butter in a pan.

Add sliced garlic to the melted butter and cook on medium heat.

Add soy sauce and rice vinegar.

Add sesame seed oil.

Turn off the heat and add honey.

Add cornstarch slurry.

Dip the chicken tenders in the wet batter, then the dry flour mixture, back into the wet batter, and finally into the dry flour mixture again.

Fry in oil at 350°F for 5-7 minutes until golden brown.

Toss the fried tenders in the honey garlic sauce.

Tips
Coat the chicken tenders with seasoned flour and allow to dry out.
The garlic should be infused into the butter, not scorched.
The ideal oil temperature for frying is 350 degrees fahrenheit.
Remember to use dry, wet, dry coating method.
