Trim the brisket.

Slather the bottom of the brisket with soy sauce.

Add a layer of Smoke Trails BBQ Brisket Rub.

Add a layer of Kosher salt.

Add a layer of Let's Gow General Purpose Rub.

Place the briskets side by side on the smoker and foil boat one of them.

Cook at 250°F, then increase to 300°F once the briskets hit the stall.

Remove the foil-boated brisket and dump out the juices.

Foil boat the control brisket.

Put the briskets in pans, plastic wrap them, and foil them.

Put them in a holding oven at 150°F for 18-24 hours.

Slice the briskets.
