Flank Steak with Chimichurri Sauce

Place the flank steak in a big Ziploc bag.

Cut two limes in half.

Squeeze the juice from the limes into the bag with the steak.

Pour an entire bottle of Dan-O's Original Seasoning into the bag.

Seal the bag and shake it to coat the steak evenly.

Fold the bag and set it in the fridge for about an hour to marinate.

Chop half a bunch of parsley.

Chop half a bunch of cilantro.

Add the chopped parsley and cilantro to a mortar.

Chop four cloves of garlic.

Chop one big jalape o.

Cut one lime in half and squeeze its juice into the mortar.

Add about two tablespoons of red wine vinegar to the mortar.

Add two or three tablespoons of extra virgin olive oil to the mortar.

Add Dan-O's Original Seasoning to the mortar.

Add Dan-O's Crunchy Seasoning to the mortar.

Grind all the ingredients in the mortar, pushing them down and around the edges to soften them up.

Add a pinch of kosher salt to the mixture in the mortar.

Fire up the Big Green Egg grill.

Pour the hot coals out of the chimney starter into the grill.

Add hickory wood chunks to the coals for smoky flavor.

Wait for the wood to turn to coals and the smoke to be clear before cooking.

Clean the grill grates by rubbing half a red onion on them.

Place the marinated flank steak directly on the hot grill.

Rotate the steak for even cooking.

Flip the steak to cook the other side.

Remove the cooked flank steak from the grill.

Let the steak rest for 10 minutes.

Slice the steak against the grain.

Spoon the homemade chimichurri sauce over the sliced steak.

1 Dan-O's Crunchy Seasoning
1 pinch kosher salt
0.5 red onion
1 hickory wood

Tips
Let the wood turn to coals before cooking to avoid dirty smoke.
Let the steak sit for 10 minutes after grilling.
