Combine water and sugar in a pot, insert a thermometer, and bring to a boil.

Add lemon juice to the boiling mixture.

Once the mixture reaches 350 degrees, turn off the heat.

Carefully stir in heavy cream, noting that the mixture will bubble up.

Once the bubbling stops, add salt and mix well.

Let the caramel cool before pouring it into a bottle for storage.

1/2 cup water
2 1/4 cup sugar
1 tsp lemon juice
2 cup heavy cream
1/2 tsp salt

Tips
Be very careful when adding heavy cream as it will pop.
Good in the refrigerator for up to 2 weeks.
