Start by adding three cups of powdered sugar into a pot.

Add eight tablespoons of cocoa powder to the pot.

Add four large egg whites to the mixture.

Add one teaspoon of instant coffee to the pot.

Add one teaspoon of vanilla paste to the mixture.

Mix all the ingredients well until combined.

Fold in about half a cup of semi-sweet chocolate chips into the mixture.

Line a baking sheet with parchment paper and grease it with butter spray.

Scoop two to three tablespoons of the batter per cookie onto the prepared baking sheet, spreading them out as they will expand significantly.

Bake in the oven at 350 degrees Fahrenheit for approximately eight minutes.

Immediately after removing from the oven, take a bowl and put it over top of each cookie to gently shape the edges.

Transfer the cookies onto a wire rack to cool down, ensuring they do not continue cooking on the hot baking tray.

Tips
If you are caffeine sensitive, you can cut back on the instant coffee.
Do not leave the cookies on the baking tray after baking, as they will continue to cook. Transfer them to a wire rack to cool.
