Heat 2 liters of water in a pan to 40°C (104°F).

Add 5 grams of xanthan gum to the warm water.

Whisk or blend the xanthan gum into the water until it forms a thickened mixture.

To thicken a sauce, take some of the xanthan gum mixture using a ladle.

Add the xanthan gum mixture to the sauce that needs thickening (shown here with a yellow sauce) and blend until the desired consistency is achieved.

For a split sauce, add the xanthan gum mixture and stick blend until it comes back together.

Tips
Xanthan gum is a powerful thickening agent that helps create the desired texture for sauces.
It thickens sauces without changing their flavor profile, unlike flour, starch, or cream.
Xanthan gum is also really good at re-emulsifying a split sauce, such as a split Hollandaise.
