Heat neutral oil in a pan on medium-high heat.

Add the roma tomato, green tomatillo, onion, and garlic cloves to the pan.

Stir continuously for 5-8 minutes until the vegetables have a sear on all sides.

Add the chile de arbol to the pan.

Mix for 6-8 minutes, ensuring the chiles do not burn and infuse the oil to an orange color.

Transfer the seared vegetables and oil to a blender once tomatillos are dark green and tomatoes are blistered.

Add water and salt to the blender.

Blend until smooth.

4 tbsp neutral oil
1 whole roma tomato
1 whole green tomatillo
1/2 whole white or purple onion
1-2 whole garlic clove
5-20 whole dried chile de arbol
1/2 cup water
1 tsp salt

Tips
Use 5 chiles for a little heat, 10 for a nice kick, 15 for spicy, and 20 if you love spicy.
Taste for salt at the end.
