Directions
- 1Dice 2 cups of strawberries.
- 2Add 1 tablespoon of lemon juice to the diced strawberries and mix.
- 3Sift together 1 3/4 cup of all-purpose flour, 1 teaspoon baking powder, and 1/4 teaspoon of salt.
- 4Cream together 1/4 cup (room temperature) unsalted butter and 4 ounces cream cheese on low speed in a stand mixer.
- 5Add 3/4 cup granulated sugar and mix.
- 6Add 2 teaspoons pure vanilla extract and mix.
- 7Crack and add 2 large eggs and mix.
- 8Add 1/2 cup of dry ingredients at a time and mix.
- 9Add in 6 ounces of white chocolate chips and mix.
- 10Drain the strawberries and sprinkle 2 tablespoons of flour over them. Stir to coat.
- 11Fold the strawberries into the cookie dough.
- 12Refrigerate cookie dough for 10 minutes.
- 13Grease a cookie sheet and scoop out the dough, spacing the dough balls 2 inches apart.
- 14Bake for 13-15 minutes until edges are golden.
