Grandma Peggy's Apple Cake

Directions

  1. 1Preheat the oven to 325°F. Grease and flour a standard Bundt pan.
  2. 2Whisk together the flour, baking soda, and 1 teaspoon of the cinnamon.
  3. 3In the bowl of electric mixer fitted with paddle, beat the sugar, eggs, oil, vanilla, and orange juice until combined.
  4. 4With mixer on low, add dry ingredients just until incorporated.
  5. 5Fold in apples, walnuts, and coconut, then spoon batter into prepared pan and smooth the top.
  6. 6Bake until a toothpick inserted in the center comes out clean.
  7. 7Cool in pan for 15 minutes, then invert onto wire rack set over baking sheet.
  8. 8Puncture the top all over with a skewer to create deep holes for the glaze to soak into.
  9. 9For the glaze, combine the sugar, butter, baking soda, and buttermilk in a medium saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil.
  10. 10Pour the hot glaze over the warm cake.
  11. 11Combine the confectioners’ sugar with the remaining 1/4 teaspoon cinnamon and dust over the top.

  • 1 1/4 cup vegetable oil
  • 1 tsp vanilla
  • 1/4 cup freshly squeezed orange juice
  • 2 cup grated unpeeled granny smith apples
  • 1 cup chopped walnuts
  • 1 cup sweetened shredded coconut
  • 1 tbsp confectioners’ sugar (optional)
  • 1 cup granulated sugar
  • 8 tbsp salted butter
  • 1/2 tsp baking soda
  • 1/2 cup buttermilk
