Pour 2 cups of sugar into a glass bowl.

Zest 8 lemons directly into the sugar, being careful not to include the bitter white pith.

Massage the lemon zest into the sugar with gloved hands to extract the lemon oils.

Transfer the lemon-infused sugar to a pan.

Add 2 cups of water to the pan with the lemon-sugar mixture.

Heat the mixture until it comes to a boil, then immediately turn off the heat.

Strain the syrup through a sieve into a bowl to remove the zest.

For a super clear syrup, place a coffee filter into a funnel and strain the syrup through it into a mason jar.

Cut a whole lemon in half.

Squeeze the juice of one half lemon into a glass jar.

Add crushed ice to the jar.

Sweeten the lemonade with the prepared lemon syrup.

Top off the mixture with water.

Stir everything well and garnish with a lemon slice and mint.

Tips
The lemon zest, not the juice, holds most of the lemon flavor.
Avoid grating the white pith of the lemon as it will make the syrup bitter.
Massaging the sugar with the lemon zest extracts the oils and flavor.
For a super clear syrup, run it through a coffee filter after straining.
Adjust sweetness to your liking with the lemon syrup.
Add crushed ice and water to complete your lemonade.
Garnish with a lemon slice and mint leaves if desired
