Directions
- 1Pour 2 cups of sugar into a glass bowl.
- 2Zest 8 lemons directly into the sugar, being careful not to include the bitter white pith.
- 3Massage the lemon zest into the sugar with gloved hands to extract the lemon oils.
- 4Transfer the lemon-infused sugar to a pan.
- 5Add 2 cups of water to the pan with the lemon-sugar mixture.
- 6Heat the mixture until it comes to a boil, then immediately turn off the heat.
- 7Strain the syrup through a sieve into a bowl to remove the zest.
- 8For a super clear syrup, place a coffee filter into a funnel and strain the syrup through it into a mason jar.
- 9Cut a whole lemon in half.
- 10Squeeze the juice of one half lemon into a glass jar.
- 11Add crushed ice to the jar.
- 12Sweeten the lemonade with the prepared lemon syrup.
- 13Top off the mixture with water.
- 14Stir everything well and garnish with a lemon slice and mint.
