Guajillo Garlic Pollo Asado

Directions

  1. 1Remove seeds and stems from ancho and guajillo peppers, chop onion, shallots, and garlic.
  2. 2Fry peppers in a pan with a little oil.
  3. 3Place fried peppers in a blender.
  4. 4Fry onion, shallots, and garlic in the same pan.
  5. 5Add fried onion, shallots, and garlic to the blender.
  6. 6Add spices, juices, sugar, beer, and vinegar to the blender and process.
  7. 7Spatchcock the chickens by cutting along the spine.
  8. 8Pour marinade over spatchcocked chickens.
  9. 9Marinate chickens.
  10. 10Smoke chickens at 250 degrees.
  11. 11Cover chicken and rest.

  • 10 whole ancho pepper
  • 2 whole guajillo pepper
  • 1 whole white onion
  • 1 head garlic
  • 2 whole shallot
  • a little bit oil
  • 1 tsp tomino
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 6 oz pineapple juice
  • 3 whole lime juice
  • 1/4 cup brown sugar
  • 6-8 oz beer
  • 1/4 cup apple cider vinegar
  • 3 whole chicken

Tips

  • Use a strainer if you prefer the marinade to be less chunky.
  • Save the chicken spine piece and freeze for later to make your own chicken stock.
