Directions
- 1Pulse one box of Nilla Wafers in a food processor until fine.
- 2Add 1/4 cup of brown sugar to the pulsed Nilla Wafers.
- 3Add 1.5 sticks (12 tbsp) of melted butter to the mixture and pulse again.
- 4Press the crust mixture evenly into the bottom of a 13x9 dish using a spatula.
- 5Refrigerate the crust for 10 minutes.
- 6Spread the no-bake cheesecake filling evenly over the chilled crust.
- 7In a bowl, combine two 3.4 oz boxes of vanilla instant pudding mix with 3 cups of cold milk.
- 8Mix with an electric mixer until thickened.
- 9Optionally, add a few drops of rum extract and mix again.
- 10Slice 3-4 fresh bananas.
- 11Arrange the sliced bananas over the cheesecake layer.
- 12Pour the thickened pudding mixture over the bananas and gently spread it out evenly.
- 13Spread a container of Cool Whip (or homemade whipped cream) on top of the pudding layer.
- 14Refrigerate the dessert for at least 1 hour, or until set.
- 15Before serving, drizzle caramel over the top.
- 16Add more Nilla Wafers and sliced bananas on top for garnish.

Tips
- You can find the no-bake cheesecake filling near the cream cheese section in Walmart.
