Directions
- 1Start by mixing together one egg, 1/3 cup of granulated sugar and 1/3 cup of brown sugar.
- 2Whisk these together really well until the mixture turns really light in color and frothy, which will take about 5 minutes.
- 3Then add in 1/3 cups of oil and mix again.
- 4Add in 3/4 cups of flour, 1/4 teaspoon of baking powder, 1 tablespoon of cinnamon and about half of an apple that's been cubed.
- 5Mix everything just until there's no more dry clumps of flour remaining.
- 6Spread half of this mixture into a small baking tray.
- 7Sprinkle on a cinnamon sugar mixture, which is just 3 tablespoons of brown sugar, granulated sugar and 1 tablespoon of cinnamon.
- 8Then spread on the remaining half of the blondie batter.
- 9Bake the blondies at 375°F for around 25 minutes or until the top is set and a toothpick inserted in the middle comes out almost clean.
- 10Take out the blondies and let them cool completely before cutting and serving, then enjoy.

Tips
- Do not overbake these blondies, they shouldn't be jiggly but a toothpick inserted in the middle should come out almost clean.
