Cheesy Fiesta Taco Rice
Directions
- 1Get a big pan over medium heat and drop in a pound of ground beef, diced onion, and seasonings
- 2Cook the ground beef and onions until brown.
- 3Add the busy people garlic and a cup of rinsed rice.
- 4Add corn, black beans, Rotel, tomato sauce, and chicken broth.
- 5Stir it all together.
- 6Let it come to a simmer and then cook covered for 15-20 minutes.
- 7Stir in some of your favorite cheeses and top with a little bit more.
- 8Pop it in the oven for just a couple minutes to get it melted.
- 9Sprinkle on some Mexican confetti.
- 10Serve and top with sour cream, taco sauce, cilantro, and fresh pico & tortilla chips.

- 1 lb ground beef
- 0.5 tsp salt
- 0.5 tsp pepper
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried cilantro
- 1 onion, chopped
- 1 tbsp minced garlic
- 10 oz Rotel
- 8 oz tomato sauce
- 10 oz corn, drained
- 10 oz black beans, drained and rinsed
- 1.5 cups chicken broth
- 1 cup long grain white rice, uncooked & rinsed
- 2 cups shredded Colby Jack cheese
