Directions
- 1Start by chopping one onion, two stocks of celery and two carrots.
- 2Add a couple of potatoes, peeled and diced.
- 3Chop one butternut squash.
- 4Roughly chop some bacon and chicken thighs or chicken breast for the protein.
- 5To a large skillet, start cooking your bacon.
- 6Once the bacon is crispy, add your chicken.
- 7Season the chicken with onion powder, garlic powder, cumin, paprika, Italian seasoning, and ginger.
- 8When the chicken is fully cooked, add your butternut squash, your mirepoix (onion, celery, carrots, potatoes), and some garlic.
- 9Season with salt and pepper.
- 10When your onions become translucent, add in some sour cream or Greek yogurt and the rest of our seasoning.
- 11Add some red pepper flakes.
- 12Add some fresh chopped rosemary.
- 13When the potatoes and butternut squash are fork-tender, add your filo dough by crumbling it and putting it on top of the mixture.
- 14Melt some butter and add some maple syrup to it.
- 15Drizzle the butter and maple syrup mixture on top of the filo dough.
- 16Bake until golden and crispy on top.
- 17Garnish with some fresh thyme.
