Start by combining cold butter, sugar, vanilla, salt, and freshly chopped rosemary in a bowl.

Mash the ingredients together until the butter softens slightly.

Mix in flour by hand until you get buttery crumbs that press into a dough.

Shape the dough into a rectangle about 1/2 inch thick.

Cover the dough with plastic wrap and roll it to a 1/4 inch square.

Square off the edges of the dough.

Cut the dough into strips, then into rectangles.

Place the cookies on a lined baking sheet.

Sprinkle sugar on top of each cookie.

Poke each cookie four times with a fork for even baking.

Bake the cookies at 300 degrees Fahrenheit for about 50 minutes until golden on top and browned underneath.

Cool the cookies briefly on the pan, then fully on a cooling rack.
