Preheat your oven to 400°F (200°C).

In a skillet over medium heat, melt the butter and sauté the onion for about 3 minutes until soft.

Add the apple and cook for another 3 minutes until slightly tender.

Remove from heat and mix in the breadcrumbs, shredded cheese, and parsley until combined.

Place the pork tenderloin on a cutting board and carefully butterfly it lengthwise, opening it like a book.

Gently pound it to about 1/2-inch thickness.

Season the inside with salt, pepper, and thyme, then spread the stuffing evenly over the surface, leaving a small border.

Roll the pork tightly and secure it if needed.

Wrap the bacon around the rolled tenderloin.

Heat olive oil in an oven-safe skillet and sear the pork for 2–3 minutes per side until the bacon starts to brown.

Transfer to the oven and bake for 25–35 minutes or until the internal temperature reaches 145°F (63°C).

Let it rest for 10 minutes before slicing and serving.
