Directions
- 1Start by creaming the cold butter in a stand mixer.
- 2Add the softened cream cheese into the butter mixture and cream again.
- 3Once that’s evenly incorporated, add the brown sugar and powdered sugar, and mix again until super creamy.
- 4Then, add the eggs and vanilla, and mix again until fully incorporated.
- 5Finally, mix in the dry ingredients little by little until the dough just comes together.
- 6Once the dough has chilled, scoop out 13 equal-sized cookie dough balls.
- 7Add 2 teaspoons of the brown sugar and cinnamon filling mixture inside each dough ball and close it.
- 8Flatten the dough balls slightly and bake on 350 for approximately 12 minutes.
- 9While the cookies bake, combine the powdered sugar, milk, and vanilla in a mixing bowl for the glaze.
- 10Drizzle the glaze on top of the baked cookies.
- 11Add some coarse brown sugar as a final touch on the cookies.

Tips
- The dough should be chilled for at least an hour.
- The glaze should be thick enough to stay on the cookie but thin enough to drizzle.
- If you like brown sugar cinnamon pop-tarts, you have to try these cookies, they are very nostalgic.
- You can eat the pop-tarts chilled or heated up according to your preference
