Directions
- 1Preheat oven to 350°F (175°C).
- 2Crush the graham crackers, finely.
- 3In a medium bowl, add the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter.
- 4Mix the ingredients together.
- 5Press the mixture into the bottom of a 9x13 inch pan lined with parchment paper.
- 6Bake the crust for 10 minutes.
- 7In another medium bowl, add and beat the cream cheese and 1 cup granulated sugar until smooth.
- 8Mix in vanilla extract and eggs.
- 9Continue beating until smooth.
- 10Divide the batter in half.
- 11To one half, add the pumpkin puree, sour cream, and pumpkin pie spice.
- 12Mix until well combined.
- 13Drop spoonfuls of each batter alternately over the crust using an ice cream scoop.
- 14Swirl with a knife, chopstick, or toothpick.
- 15Bake for 25-30 minutes, or until set.
