Directions
- 1Clean and rinse the lemons.
- 2Grate lemon zest and rub it together with the sugar.
- 3In a mixer bowl, add the cubed butter, granulated sugar, brown sugar, and vanilla extract.
- 4Add dry ingredients in small batches, mixing on low speed.
- 5Add lemon chips.
- 6Scrape the bottom of the bowl and the attachment periodically.
- 7Add eggs.
- 8Roll the cookie dough into 6 ounce balls.
- 9Split each ball open and push the sides together before chilling.
- 10Place baking sheet on top of another baking sheet.
- 11Bake the cookies.
