4
In a bowl, combine the olive oil, black pepper, salt, onion powder, and garlic powder.
5
Stir the seasoning mixture together.
6
Lather the seasoning mixture all over the beef roast, making sure to coat the sides and the bottom.
7
Roast the beef in the 325-degree oven for about 1 hour and 15 minutes to 1 hour and 45 minutes.
8
Check the internal temperature with a meat thermometer at the hour mark.
9
Once the roast reaches its target internal temperature, pull it out of the oven and let it rest for about 10 minutes before carving.

1 tablespoon black pepper
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 eye of round roast

Tips
The actual cooking time will depend on the size of your roast.
Use a meat thermometer to ensure 100% accuracy.
If you want a nice reverse sear finish, crank up the oven to 500 degrees Fahrenheit for the final 5 degrees until you reach 135 degrees Fahrenheit.
Let the roast rest for about 10 minutes before carving.
This roast is best served thinly sliced.
