Get a 2.5-pound fresh pork loin.

Truss the pork loin so that it cooks a little more evenly.

Season the pork loin very well with salt.

Place the seasoned pork loin in the refrigerator overnight.

Pull out the pork loin from the refrigerator and place it fat cap side down in a pan to render some of the fat and brown everything up.

Flip the pork loin on its side until it becomes beautifully golden brown.

Flip the pork to the remaining unseared side on the bottom.

Add herb butter to the pork loin in the pan.

Add the pan with the pork loin to the oven at 300 degrees Fahrenheit.

Pull the pork loin out of the oven.

Slice the pork loin.

Serve and enjoy.
