Directions
- 1Preheat the oven to 350 F.
- 2In a mixing bowl, combine all purpose flour, baking soda, and salt. Mix well and set aside.
- 3In a separate bowl, add melted butter along with light brown sugar and granulated sugar.
- 4Mix for 3 minutes until a smooth paste forms.
- 5Crack in the egg and add vanilla bean paste.
- 6Whisk for 2-3 minutes until the batter is light in color.
- 7Add the dry batter to the wet batter.
- 8Add in 1 cup of chocolate chips. Reserve the remaining for later use.
- 9Mix the cookie dough until just combined.
- 10Take a 9x9 baking dish and line it with parchment paper.
- 11Spread a layer of graham crackers on the base.
- 12Add half of the cookie batter on top and spread it evenly.
- 13Add a layer of marshmallows on top.
- 14Top it with the remaining chocolate chips.
- 15Add the remaining cookie dough on top.
- 16Bake for 25-28 minutes or until the cookie marshmallows are melted and the cookie dough is lightly golden from the top.

- 1 tbsp vanilla bean paste
- 0.5 cup light brown sugar
- 0.33 cup granulated sugar
- 1 large egg, room temp
- 0.5 tsp baking soda
- 1 pinch salt
- 1.5 cup semi sweet chocolate chips
- 1.5 cup mini marshmallows
- 8 sheets graham crackers
