Directions
- 1Add one thinly sliced onion to a hot oiled pan, add salt and pepper, and sauté until caramelized.
- 2Set the caramelized onions aside in a bowl.
- 3Add four tablespoons of butter to the pan and melt. Whisk in four tablespoons of flour to make a roux.
- 4Add three cups of whole milk, whisking constantly, and bring to a simmer for two to three minutes until thickened. Set aside.
- 5Grease a 9x13 baking dish with some butter.
- 6Peel and thinly slice three pounds of potatoes. Place half of the potatoes in a layer on the bottom of the baking dish.
- 7Add half of the caramelized onions to the baking dish.
- 8Add eight to ten pieces of crushed bacon to the dish.
- 9Shred eight ounces of cheese and add half to the dish.
- 10Drizzle half of the sauce over the cheese.
- 11Repeat the layering process: potatoes, onions, bacon, cheese, and remaining sauce.
- 12Cover the dish with foil and bake at 350 degrees for one hour.
- 13Remove foil and bake for an additional 20 to 30 minutes.
- 14Add chopped green onions to the top.
- 15Serve with sour cream and your favorite hot sauce.
