Directions

Add the ground almonds and caster sugar to a large bowl and mix them together.

Grate the zest of half a lemon into the bowl.

Add the egg whites and stir with a wooden spoon until the eggs are absorbed and a sticky dough forms.

Use your hands to bring the dough together.

Divide the dough equally and shape into perfectly round balls.

Roll each ball in granulated sugar to coat.

Place the balls on a baking tray with space in between.

Garnish each biscuit with a skin-on almond, lightly pressing it into the center.

Place in the fridge to rest.

Bake in the oven at 160 degrees on fan mode.

Let the biscuits rest and cool down after removing from the oven.

200 g ground almonds
200 g caster sugar
1/2 whole lemon zest
2 whole egg white
4 tbsp granulated sugar
10 whole skin-on almond

Tips
If the dough is not holding together and is too sticky, add a little more ground almonds.
If you want to make small bites instead of the traditional large Sardinian size, you can make about 18-20 instead of 10.
