Directions
- 1Preheat the oven to 350 F.
- 2Prepare a baking sheet with parchment paper and set aside.
- 3In a bowl, add melted butter, granulated sugar, and brown sugar.
- 4Mix for 2 to 3 minutes until well combined.
- 5Crack in the egg and whisk for 1 to 2 minutes until smooth.
- 6Add in vanilla bean paste and mix to combine.
- 7In a separate bowl, combine all purpose flour, baking soda, and espresso powder.
- 8Mix the dry ingredients well to combine.
- 9Gradually incorporate the dry ingredients into the wet batter until they are just combined.
- 10Add the chocolate chips and mix them just to combine, avoiding overmixing the batter.
- 11On the prepared baking sheet, add graham cracker squares.
- 12Top the graham crackers with the chocolate rectangles.
- 13Add a marshmallow on top of each chocolate rectangle.
- 14Scoop out a portion of cookie dough, flatten it slightly, and place it on top of the marshmallow, covering it completely.
- 15Place 3-4 cookies on one baking sheet, placing them 2-3 inches apart.
- 16Bake the cookies for about 12-13 minutes or until the edges are golden and crispy and the center is chewy and soft.
- 17Let cool completely for 25-30 minutes before serving and enjoy.
