Cut the lemons and load them up with salt.

Fill a jar with the salted lemons to preserve them.

Chop the preserved lemon into pieces.

Add the chopped preserved lemon to a pan with water.

Bring to a boil and add a thickening agent.

Once cooled, blend the mixture to get a smooth gel.

Wrap an entire lemon in foil.

Roast the foil-wrapped lemon for about an hour.

Strain the pulp from the roasted lemon.

Finely chop all the zest from the roasted lemon.

Add a thickening agent to the strained lemon pulp.

Mix everything back together, including the chopped zest.

Pour the mixture into a pan and cool it to form a bright and sweet lemon gel.

Slice lemons.

Place lemon slices on a baking sheet to intentionally burn them.

Add the burnt lemon slices to a pan with sugar and water.

Boil the mixture to extract the caramelized flavors.

Strain the liquid from the burnt lemons.

Scoop the cooled mixture into a blender and blend until smooth.
