Add all of the dry ingredients into a bowl.

Mix and set frosting in fridge to thicken.

24 g Coconut Flour
30 g Self Raising Flour (or plain flour + 1 tsp baking powder)
50 g Natural Sweetener (Lakanto Monkfruit Sweetener)
1 Scoop Protein Powder (your choice of flavour - Rule1 Vanilla Creme)
2 Biscoff Biscuits (snack sized - crushed)
1 Tsp Vanilla Extract
170 g Flavoured or Plain Low Fat Greek Yoghurt (Danone YoPro Salted Caramel Yoghurt)
1 Egg

0.5 Scoop Protein Powder
30 g Sugar Free Icing Powder (Lakanto Monkfruit Icing Powder)
40 g Melted Biscoff Spread
1 Crushed Biscoff Biscuit (spread evenly across all 4 cookies)
Leftover Melted Biscoff (spread evenly across all 4 cookies)

Tips
When making the batter if the texture is too thick add a few splashes of milk until you reach the right consistency.
If you accidentally add too much milk and it’s too runny, place it in the fridge until it’s firm enough for you to shape them into cookies.
