Season the pork lightly with salt and pepper if desired.

Place the pork roast in the slow cooker.

In a small bowl, whisk together maple syrup and Dijon mustard.

Pour the mixture evenly over the pork, coating all sides.

Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the pork is tender and easily pulls apart.

Slice or shred the pork and spoon the maple mustard glaze over the top before serving.

Tips
