Process up some onion, celery, carrots, and garlic in a food processor.

Add olive oil to a big pan and add the processed vegetables to cook them down for around 15 to 20 minutes until they develop a nice brown color.

Season the vegetable mixture heavily with salt.

Once the veggie mixture is browned, add in 3 pounds of ground chuck and plenty of salt.

Cook the meat with the veggies for another 15 to 20 minutes until you get a brown crud on the bottom of the pan.

Add in two cups of tomato paste and cook this together until the tomato paste has browned for around 4 to 5 minutes.

Add in 3 cups of red wine (Cabernet) and cook this down until the wine has reduced by half, which took around 8 to 10 minutes.

Add in some plain old water.

Add in one bunch of thyme and three bay leaves.

Let this simmer for around 4 to 5 hours, adding water as needed, and tasting as you go until it looks like a rich, thick sauce.

Remove the thyme and bay leaves from the sauce.

Remove half of the sauce and set aside.

Season your pasta water like the ocean with plenty of salt.

Cook the spaghetti for around one minute less than what the package says, as it will finish cooking in the sauce.

Add the partially cooked spaghetti to the remaining sauce in the pan.

Start mixing the spaghetti into the sauce, aiming for about 50% sauce and 50% pasta.

Add in some of the reserved pasta water to the spaghetti and sauce mixture.

To finish it off, mix in a whole bunch of freshly grated Parmigiano-Reggiano and a drizzle of olive oil, mixing it up to bring it all together.

Serve the pasta by twirling it into a bowl.

Top with more sauce, freshly grated Parmigiano-Reggiano, and a drizzle of olive oil.
