Preheat oven to 375°F. Line baking sheets with parchment paper or silicone liners.

Cream butter and sugar until light and fluffy.

Beat in eggs and vanilla until smooth.

Add flour, baking soda, and cream of tartar; mix just until combined.

Make the cinnamon sugar mixture by stirring together the granulated sugar and ground cinnamon.

Scoop dough into large 3-tablespoon portions and roll into balls.

Roll each ball in cinnamon sugar.

Place on baking sheet about 2 inches apart.

Bake in a 375 degree oven for 10 minutes.

Let cookies cool on the pan for a few minutes before transferring.

Tips
Pull them out when they don’t look quite done — they’ll finish setting as they cool and stay perfectly soft.
Bake at 375 degrees Fahrenheit for 10 minutes to get slightly crispy edges and soft centers.
