Sweet Potato Casserole

Directions

  1. 1Preheat your oven to 425°F.
  2. 2Line a baking sheet and stab lots of holes into your sweet potatoes.
  3. 3Bake for 1hr-1hr 15 minutes or until soft all the way to the middle.
  4. 4Lower the heat to 350°F.
  5. 5Peel the skin off the potatoes and place in a large bowl.
  6. 6Add butter, brown sugar, granulated sugar, evaporated milk, vanilla, and cinnamon to the bowl.
  7. 7Mash until everything is fully incorporated.
  8. 8For the streusel, mix the softened butter, brown sugar, and flour with a fork or your hand.
  9. 9Then add the pecans and mix again.
  10. 10Whisk together the two eggs.
  11. 11Pour the whisked eggs into the sweet potato mixture and mix immediately.
  12. 12Grease a casserole dish and pour in the sweet potato mixture.
  13. 13Pinch off pieces of the streusel and place on top of the sweet potato mixture.
  14. 14Bake for 40 minutes at 350°F.
  15. 15Pull out the casserole and change the oven to 475°F.
  16. 16Sprinkle on the mini marshmallows and bake until golden on top.

  • 5 whole large sweet potatoes
  • 1 stick softened butter
  • 0.5 cup brown sugar
  • 0.5 cup granulated sugar
  • 0.66 cup evaporated milk
  • 2 whole eggs
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • Mini marshmallows
  • 6 tbsp softened butter
  • 0.5 cup flour
  • 0.66 cup brown sugar
  • 1 cup pecans

Tips

  • To avoid overflowing, make this in a deep casserole dish.
  • WATCH MARSHMALLOWS CLOSELY!! It goes fast and marshmallows will catch on fire if they get too burnt in the oven!!!
