Rub olive oil over each pork chop and season generously with salt and lightly with freshly ground pepper.

Heat an oven-safe heavy skillet over high heat and preheat the oven to 400 degrees Fahrenheit.

Sear the pork chops for 2 minutes on each side.

Transfer the skillet immediately to the oven and cook until the internal temperature of the chop reaches 145 degrees Fahrenheit, about 15 minutes.

Let the pork chops rest for 5 to 10 minutes before slicing into them to allow the juices to reabsorb.
