Directions
- 1Melt 3/4 cup of butter.
- 2In a bowl, mix 1 and 1/4 cups of sugar and 2 tbs of lemon zest.
- 3Add 3 large eggs to the bowl and whisk until the sugar dissolves.
- 4Add 3 tbs of lemon juice and the melted and cooled butter.
- 5Add 1/2 tsp of salt.
- 6Add 2 cups of all-purpose flour and mix well.
- 7Pour the batter into a greased 8x8 inch baking pan and spread evenly.
- 8Bake at 350F for 30-35 minutes.
- 9Make lemon icing by mixing 1 cup of powdered sugar with 1-2 tbs of lemon juice.
- 10Spread the icing over the baked brownies.
- 11Sprinkle with more lemon zest.
- 12Let the icing set for 1 hour to firm before cutting into squares.
