Directions
- 1Boil water in a pot and add mini farfalle pasta.
- 2Season chicken with salt, garlic powder, creole seasoning, and paprika.
- 3Add olive oil to a pan and place the seasoned chicken breasts in it to cook.
- 4Once chicken is cooked, remove it from the pan.
- 5Add tomato paste, diced shallots, diced sun-dried tomatoes, and minced garlic to the same pan.
- 6Cook for 2-3 minutes, stirring occasionally.
- 7Add 1/3 cup of pasta water to deglaze the pan and continue stirring.
- 8Pour in 2 cups of heavy whipping cream.
- 9Add garlic powder, creole seasoning, red pepper flakes, pepper, and salt to the sauce.
- 10Stir the sauce well to combine the seasonings.
- 11Add 1/3 cup of grated Parmesan cheese to the sauce and stir until melted and combined.
- 12Add a handful of spinach to the sauce and stir until wilted.
- 13Add the cooked mini farfalle pasta to the sauce and mix until thoroughly coated.
- 14Place the sliced cooked chicken on top of the pasta.
