Directions
- 1Slice the zucchini very thin using a mandolin or a sharp knife.
- 2Arrange the zucchini slices in a single layer on a parchment-lined baking sheet, ensuring the ends of each circle are touching to form a rectangle.
- 3Season the zucchini with salt and pepper and drizzle with oil.
- 4Sprinkle 1/2 cup of shredded mozzarella cheese evenly over the zucchini slices.
- 5Bake in a preheated oven at 350°F (175°C) for 25 minutes or until the cheese is golden brown.
- 6Once baked, remove from the oven, invert it, flip it over, and carefully remove the parchment paper.
- 7Spread a layer of basil pesto on the zucchini base.
- 8Break open a ball of creamy burrata and spread it over the pesto.
- 9Season the burrata with a little bit of salt and pepper.
- 10Place tomato slices over the burrata.
- 11Add a generous amount of arugula on top of the tomatoes.
- 12Carefully roll up the zucchini base with all the fillings to form a wrap.
- 13Slice the wrapped zucchini in half to serve.
