Bring a large pot of salted water to a boil.

Add fresh green beans and cook for 5-7 minutes until they are bright green and crisp but soft to the bite.

Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process; let them sit.

Process peeled garlic cloves with a little avocado oil until it has a watery texture but still shows pieces of garlic.

Heat a wide skillet or wok over high heat and add oil to coat the bottom of the pan.

Once the oil is shimmering, add the green beans in a single layer and let them sit undisturbed for 1-2 minutes to get a char.

Toss the green beans and repeat the blistering process once more.

Add the prepared garlic directly to the pan with the green beans and cook and toss for 1-2 minutes until fragrant.

Remove the green beans to a serving bowl.

In the same dirty pan, add sesame oil, soy sauce, and coconut sugar (or regular sugar/maple syrup).

Mix the sauce ingredients quickly until the sugar melts and the mixture becomes glossy.

Pour the glaze over the green beans.

Zest the peels of two lemons into the green beans.

Juice two full lemons and add the juice to the green beans.

Generously salt the green beans to taste and mix everything together.

Serve immediately.

0.25 cup soy sauce or tamari
2 tbsp sugar or honey
2 small lemons zested and juiced

Prep a bowl of ice water and boil water simultaneously.
Boil green beans for 5-7 minutes until bright green and crisp, then immediately transfer to ice water to stop cooking.
Process garlic cloves with avocado oil until spoonable with visible pieces.
Achieve a nice char on the green beans by letting them sit undisturbed in a hot pan.
Add garlic directly to the pan with green beans and cook until fragrant.
Make the glaze in the same 'dirty' pan for added flavor.
Use two full lemons for a truly addictive flavor, or one if you prefer less tang.
