Wash your hands.

Make nuoc mau or Vietnamese caramel by adding half a cup of sugar to a pot on medium-low heat.

Cook the sugar slowly while occasionally stirring.

Continue to heat the sugar until it fully dissolves and turns a dark amber color.

Add in 2 lbs of sliced pork belly and brown it off.

Drop in some minced garlic.

Season with a 1/4 cup of fish sauce.

Add in some chopped Thai chilies.

Add in an excessive amount of black pepper.

Pour in a cup of water.

Bring that up to a boil.

Reduce the heat and let that simmer covered until fork tender.

Serve and plate.
