Start by preparing the pork tenderloin, chopping it into one-inch pieces.

Marinate the pork for about 15 minutes using the above ingredients.

Top it off with a bit of starch, as that will hold shape.

Heat oil to high and fry the pork twice.

For the first time, fry until it's a little pink, then get it out.

Reheat the oil and put the pork back again.

Heat until golden and crispy.

When you see it turning this color, that means the second batch is ready.

Take the pork out.

Make the sweet and sour sauce by mixing the ingredients: ketchup, rice vinegar, sugar, soy sauce, water, salt, and corn starch.

Leave a little bit of oil in the pan.

Pour in the sauce and simmer on low until it thickens.

Toss in the fried pork back.

Stir quickly to coat evenly.

15 ml Oyster Sauce
3 g Corn Starch
45 g Ketchup
30 g Rice Vinegar
45 g Sugar
15 g Soy Sauce
30 g Water
1 g Salt
10 g Corn Starch

Tips
Don't overcook the pork.
When the second batch of pork turns golden, it's ready.
