To make cake flour, remove 2 tablespoons of all-purpose flour from 1 cup and replace with 2 tablespoons of cornstarch.

To make self-rising flour, mix 1 cup of all-purpose flour with 1/4 teaspoon of salt and 1 1/2 teaspoons of baking powder.

To make buttermilk, mix 1 cup of regular milk with 1 tablespoon of lemon juice or vinegar.

To make icing sugar, process granulated sugar in a blender or food processor until it reaches a fine, dusty consistency.

To make light brown sugar, mix 1 cup of granulated sugar and 1/2 tablespoon of molasses.

To make medium brown sugar, mix 1 cup of granulated sugar and 1 tablespoon of molasses.

To make dark brown sugar, mix 1 cup of granulated sugar and 1 1/2 tablespoons of molasses.
