Directions

1Boil pasta until cooked.
2Shred mozzarella, Colby jack, and cheddar cheese.
3Mix shredded cheeses together.
4In a small bowl, mix together salt, pepper, garlic powder, and smoked paprika.
5In a frying pan, melt butter over medium heat.
6Add half of the seasoning mix to the melted butter and stir.
7Add flour to the butter and seasoning mix and cook until lightly browned.
8Add evaporated milk and whisk constantly to prevent lumps.
9Add heavy cream and whisk until smooth.
10Add the remaining seasoning mix and Dijon mustard.
11Add half of the shredded cheese to the sauce, stirring until melted. Repeat with remaining cheese.
12Add cooked pasta to the cheese sauce and mix well.
13Layer the mac and cheese in a baking dish, starting with a layer of mac and cheese, then a layer of shredded cheese, and repeating.
14Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until the top is melted and bubbly.
15Broil for 1-2 minutes to create a crust.
16Garnish with chives before serving.
