Cut four green onions right in the middle to separate the white and the green part.

Split the white part of the green onion in half and cut into 2-inch sections.

Cut the green part of the green onion into 2-inch sections and keep them separate from the white part.

Mince about four cloves of garlic by crushing with a knife and finely mincing.

Cut one onion into large strips and separate the layers.

Slice beef against the grain into average thickness.

Marinate the beef with 2 tsp soy sauce, 2 1/4 tsp dark soy sauce, 3/4 tsp oyster sauce, 3/4 tsp sugar, 1 1/2 tsp baking soda, and 4 1/2 tsp corn starch. Mix well.

Add 3 tsp oil and 1 1/2 tsp sesame oil to the marinated beef and mix again.

Preheat your pan over medium-high heat and add 3 tbsp oil.

When the oil is hot, add the onion and the white part of the green onion.

Stir fry the onions just enough to get rid of the raw spicy taste.

Season the onions with 1/4 tsp sugar and 1/4 tsp salt.

Remove the cooked onions from the pan when they are ready.

Add a little bit more oil to the hot pan.

Add the beef and spread them out; let them pan fry until the bottom is slightly brown.

Stir the beef to flip them over and add the minced garlic.

Stir fry the beef to mix the garlic evenly until the beef is about 70% done.

Add 1 1/2 tbsp rice wine to the edge of the pan.

After the rice wine cooks off, add 3 tsp dark soy sauce and 1 1/2 tsp oyster sauce and mix well.

Add 1/3 cup water to the pan.

When the sauce starts to thicken, add some crushed black pepper and all the cooked onions back to the pan.

Give a few stirs to mix everything together.

1.5 tsp baking soda
4.5 tsp corn starch
3 tsp oil
1.5 tsp sesame oil
3 tbsp oil for cooking
3 tsp dark soy sauce
1.5 tsp oyster sauce
1.5 tbsp cooking wine
0.33 cup water

Tips
Add oil only after the marinating seasoning has been mixed into the beef.
Do not overcook the onions to preserve their crunchy texture.
Add rice wine to the edge of the pan so the hot pan can bring out the aroma.
