Peel and chop about six to seven small russet potatoes.
2
Add one package of chopped, smoked, fully cooked sausages.
3
Add a little bit of salt and pepper.
4
Add two and a half cups of chicken broth.
5
Cook on low for about six hours until the potatoes are tender (or 5-6 hours on low, or 3-4 hours on high).
6
Stir in half a block or four ounces of cream cheese.
7
Stir in about a cup of half and half.
8
Let everything heat through on low for about another 20 to 30 minutes.
9
Serve with a little bit of shredded cheese, if desired.
Ingredients
2 lbs russet potatoes, peeled and chopped
1 package fully-cooked smoked sausages
2.5 cups chicken broth
salt
pepper
4 ounces cream cheese
1 cup half and half
a little bit shredded cheese
Equipment
crock pot
Tips
The fully-cooked sausage helps season the soup, reducing the need for much additional seasoning.
Optional toppings include shredded cheese, bacon, chives, and crackers.
