Cube the chicken breast into bite-sized pieces.

Add the chicken to a bowl.

Add sugar, sesame oil, white pepper, garlic, and baking soda to the chicken.

Mix the chicken and set aside.

For the wet batter, add flour, cornstarch, white pepper, a bit of sugar, salt, baking soda, and water to a bowl.

Whisk until the batter is like pancake batter.

Coat the chicken in cornstarch.

Fry the chicken in oil.

Grab a chunk of chicken, put it into the wet batter to coat it, and then put it into the oil.

Repeat until there is no more chicken left.

Add ketchup, brown sugar, and vinegar to a bowl to make the sweet and sour sauce.

Add a splash of red dye to the sweet and sour sauce.

Tips
For the sweet and sour sauce, if you don't have vinegar, you can use lemon juice. Add a splash of red dye to the sweet and sour sauce for a more red look.
