Directions

Slice the pork shoulder into 1-inch thick steaks.

Season the steaks as desired and let them rest while you start the grill fire.

Set up the grill for direct and indirect cooking and preheat to 300 degrees.

Place the steaks on the grill and cook over indirect heat for 45 minutes.

Baste the steaks with your sauce, flip, baste the other side, and cook for another 45 minutes over indirect heat.

Move the steaks directly over the coals and cook for 15-20 minutes per side, continuing to baste with sauce.

Remove the steaks from the grill when they reach an internal temperature of about 185 degrees.

Let the steaks rest before serving.

bbq sauce or mop of choice

Tips
You can have your butcher cut the pork shoulder into steaks for you.
The steaks can be taken up to 200 degrees internal temperature if preferred.
You can wrap the steaks in foil and let them rest in their own juices for a while.
