Chop the green onions, separating the white parts from the green parts.

In a small bowl, whisk together the soy sauce (or tamari/coconut aminos), honey, grated ginger, and red pepper flakes.

Heat sesame oil in a large skillet or wok over medium-high heat.

Add the white part of the green onions and sauté for about a minute.

Add the frozen peas and carrots to the skillet and stir.

Sauté the peas and carrots until the carrots are tender.

Whisk the eggs in a separate bowl.

Move the sautéed vegetables to one side of the pan.

Add a little more oil if needed to the empty side of the pan.

Pour in the beaten eggs and cook slowly while stirring until cooked through.

Remove the cooked vegetables and eggs from the skillet and set aside in a bowl.

Add a little more sesame oil to the skillet.

Add the shrimp to the skillet and cook for about 2 minutes or until they turn pink.

Add the cooked vegetables and eggs back into the pan with the shrimp.

Add the cauliflower rice to the pan and stir to combine everything.

Pour the prepared soy sauce mixture over the cauliflower rice and other ingredients.

Toss to combine all ingredients and cook for a few minutes until the cauliflower has softened.

Sprinkle the green onions over the cooked fried rice.

Cover the pan for about a minute.

Serve the cauliflower shrimp fried rice in bowls.

6 cups cauliflower rice
0.25 cup Reduced Sodium Tamari, Coconut Aminos, or soy sauce
1 Tablespoon honey or keto liquid sweetener
0.5 teaspoon grated fresh ginger
1 Pinch red pepper flakes
1 tablespoon sesame oil
1 bunch green onions, chopped, whites separated from greens
0.5 cup frozen peas
0.5 cup carrots, cubed
3 eggs, beaten
0.5 pound shrimp, thawed, peeled, and deveined

Tips
You can use pre-packaged cauliflower rice or make your own.
Don't overcook the shrimp, or they will get tough.
