Directions

Remove the stems, seeds, and veins from the Chile Guajillo and Chiles de Arbol.

Bring 4 cups of water to a boil and soak the peppers for 20 minutes until pliable.

Dice the jalapeños, onion, and garlic cloves.

Brown the ground beef over medium-high heat until no longer red; drain excess fat.

Add the diced onion, garlic, and jalapeños to the meat and mix.

Season the meat mixture with cumin, oregano, salt, pepper, and chili powder.

Add the tomato sauce, mix, and simmer for 5-7 minutes.

Blend the soaked peppers with 1-2 garlic cloves and chicken broth until smooth.

Heat vegetable oil in a saucepan, strain the blended sauce into the pan, and discard residue.

Season the sauce with cumin, oregano, and chicken bouillon; simmer for 8-10 minutes.

Lightly fry the tortillas on both sides in oil.

Add a layer of meat and sauce to the bottom of the baking dish.

Fill each tortilla with meat and Queso Manchego, fold, and place seam-side down in the dish.

Pour remaining enchilada sauce over the top and add more Queso Manchego.

Bake at 350 degrees Fahrenheit for 10-12 minutes.

Top with cilantro, onion, red onion, Queso Cotija Enchilado, and a drizzle of jocoque.

Tips
You can substitute the jalapeños for a green bell pepper.
The salt and pepper seasoning is to taste.
You can use chicken bouillon or salt for the sauce seasoning.
Lightly frying the tortillas keeps them from falling apart.
