Directions
- 1Cut the beef chuck into cubes.
- 2Season the beef chuck cubes with salt and pepper.
- 3Sear the seasoned beef chuck in a pan until browned.

- 5Mince the garlic.
- 6Halve the cherry tomatoes.
- 7Sauté the diced onions, minced garlic, and halved cherry tomatoes in the pan.
- 8Add tomato paste to the sautéed vegetables and mix.
- 9In a separate pan, toast bay leaves, peppercorns, cinnamon stick, and dried chilies.
- 10Add the seared beef chuck back into the pan with the sautéed vegetables.
- 11Pour beef stock into the pan.
- 12Add the toasted spices to the beef and stock mixture.
- 13Scoop out the liquid and spices from the pan into a blender.
- 14Blend the liquid and spices until smooth.
- 15Shred the cooked beef.
- 16Pour the blended sauce into a clean pan.
- 17Add paprika to the sauce.
- 18Add the shredded beef to the sauce.
- 19Add cooked pasta to the pan with the sauce and beef.
- 20Add pasta water to the mixture.
- 21Add butter to the pasta mixture.
- 22Mix everything until well combined.
- 23Serve the birria pasta on a plate.
- 24Grate Parmesan cheese over the pasta.
- 25Garnish with diced red onion.
- 26Garnish with chopped cilantro.
