- 5Mix all spices (onion powder, ground cloves, ground allspice, ground cinnamon, celery seed) in a small bowl.
- 6Whisk the spice mixture into the pan.
- 7Bring to a low simmer, where bubbles break the surface, not a rolling boil.
- 8Reduce heat to low-medium.
- 9Simmer uncovered for 15 to 18 minutes, stirring every 3 to 4 minutes, until the volume reduces by about 20%.
- 10Remove from heat.
- 11Let cool for 5 minutes.
- 12Immersion blend for 30 to 45 seconds to achieve a nice smooth, glossy texture.
- 13Cool to room temperature before jarring, as it thickens as it cools.

Tips
- Ground clove is the secret spice that makes this taste like Heinz ketchup; do not add more than 0.5g.
