Directions
- 1Pour enough enchilada sauce to cover the bottom of a 9x13 baking dish.
- 2Plop scoops of refried beans into the enchilada sauce, one scoop for each piece of chicken.
- 3Place a piece of chicken on each pile of beans.
- 4Season the chicken generously with taco seasoning.
- 5Drop a block of softened cream cheese into a mixing bowl.
- 6Add a can of diced green chilies.
- 7Add a cup of shredded cheese.
- 8Add a quarter cup of the enchilada sauce.
- 9Add a tablespoon of taco seasoning.
- 10Whisk all the sauce ingredients together until beautifully combined.
- 11Plop a scoop of the sauce mixture on top of each piece of chicken.
- 12Spread the sauce mixture out on top of the chicken.
- 13Bake the dish in the oven at 350 degrees for about 30 minutes.
- 14Cover the baked dish with shredded cheese.
- 15Return the dish to the oven for 5 to 10 minutes, until the cheese is melted and the chicken is cooked through.
- 16Take the dish out of the oven.
- 17Sprinkle chopped green onions on top.
